BBQ Bison Smash Burgers
Smash burgers are all about crispy edges, melted cheese, and big flavor, and Great Range Bison makes them even better. Ground bison is naturally lean and packed with flavor, making it a great choice for thin burgers cooked fast on a hot griddle.
You don’t need much to make these burgers shine. A little diced onion, salt, and pepper are mixed right into the bison before the meat is formed into quarter-pound balls and smashed thin. Finish each burger with melted cheese and a drizzle of barbecue sauce, then pile it onto a toasted sesame bun with whatever toppings you love.
These come together fast, making them an easy pick for burger night, summer grilling, or any time you’re craving a crispy-edged burger without a long ingredient list.

BBQ Bison Smash Burgers
Ingredients
- 1 pound Great Range ground bison
- ¼ cup finely diced onion
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 squares parchment paper
- 4 slices cheese
- ¼ cup barbecue sauce or to taste
- 4 sesame seed hamburger buns toasted
- Favorite burger toppings for serving
Instructions

Preheat a flat-top griddle, grill griddle or large skillet over medium-high to high heat.

Place the ground bison in a large bowl. Add the diced onion, salt and black pepper.

Cut four squares of parchment paper large enough to cover each portion of meat.

Gently mix the bison mixture, then divide it into four equal portions. Roll each portion into a quarter-pound ball.

Place the bison balls onto the hot cooking surface. Set a square of parchment over each ball and use a burger press or sturdy spatula to smash the meat into a thin patty.

Remove and discard the parchment paper.

Cook the burgers for 1–3 minutes per side, depending on thickness and preferred doneness.

After flipping, place a slice of cheese over each burger and let it melt as the burgers finish cooking.

Drizzle barbecue sauce over each burger.

Transfer to toasted sesame seed buns and finish with your favorite burger toppings. Serve hot.
