Bison Ramen

Packed with protein from strips of tender bison sirloin and absolutely bursting with flavors, this bison and broccolini ramen is the perfect way to celebrate stir fry-day!

Bison is a nutritious source of fiber and protein, making it a leaner alternative to other red meats. Healthy whole wheat soba noodles are used in this dish to make it filling weeknight meal that comes together in under an hour.

The pan drippings are then used to make a creamy peppercorn sauce that adds depth and texture to each bite.

Bison Ramen Noodles

Ingredients

  • 2 Great Range Bison sirloin steaks

For Marinade:

  • 4 tablespoons honey -warmed
  • 2 tablespoons sambal olek*
  • 4 tablespoons soy sauce
  • 2 tablespoons hoisin
  • 2 tablespoons gochujang**
  • 2 tablespoons rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1 teaspoon garlic - minced
  • 1 teaspoon ginger - minced
  • 1 teaspoon red pepper flakes - to taste

For Ramen:

  • 2 tablespoons toasted sesame oil
  • 1/2 sweet onion - sliced
  • 1/2 red bell pepper - sliced
  • 3-4 button mushrooms - sliced
  • 1 cup snow peas
  • 3 cups vegetable broth
  • 1/2 cup reserved marinade
  • 3 bundles whole wheat soba noodles***
  • 4 cups tablespoons**** - chopped
  • 1 tablespoon sesame seeds - optional for topping

Instructions

  1. Whisk together all of the ingredients for the marinade. Pour over the bison sirloin steaks in a bowl or leak proof container and marinate at room temperature for 60 minutes or while preparing the rest of the ingredients.

  2. In a large pot, add a tablespoon of sesame oil over medium high heat. Add the marinated bison sirloin steaks to the pot, reserve ½ cup of marinade. Sear the bison sirloin on each side for 2-3 minutes then remove – the steaks will not be cooked all the way through. Rest the steaks on a plate or cutting board while cooking the rest of the ingredients.

  3. Without cleaning the pot, add another tablespoon of sesame oil. Saute the onion, red pepper, mushrooms and snow peas for 5-8 minutes, until the onions are starting to brown.

  4. Pour in the vegetable broth and reserved ½ cup of marinade. Bring to a rolling boil, stirring occasionally. Slice the bison sirloin while the pot comes to a boil.

  5. Add the noodles and cook until the noodles are al dente – about 2-3 minutes. Then stir in the broccolini and bison sirloin. Continue cooking for another 3-5 minutes until the broccolini has softened and the bison sirloin is cooked through – for the most tender results, the bison should be lightly pink in the center.

  6. Serve the ramen right away sprinkled with sesame seeds. Store leftovers in an airtight container in the fridge for up to three days. Enjoy!
