Bison Burger Twice-Baked Potatoes

Ingredients

  • 2 large russet potatoes
  • 8 ounces Great Range ground bison
  • Salt and black pepper to taste
  • ¼ cup sautéed diced onion
  • 2 tablespoons sliced green onions
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon sweet pickle relish
  • 2 –4 tablespoons milk
  • Shredded cheese optional
  • Diced pickles optional
  • Additional ketchup and mustard optional
  • Sour cream optional

Instructions

  1. Preheat the oven to 400°F.
  2. Wrap the potatoes in foil and bake for about 60 minutes, or until tender.
  3. Brown the ground bison in a skillet over medium-high heat, breaking it apart as it cooks. Season with salt and pepper.
  4. Slice the baked potatoes in half lengthwise. Scoop out the centers, leaving enough potato around the edges to support the skins.
  5. Combine the browned ground bison with the potato filling.
  6. Add the sautéed onions, green onions, ketchup, mustard, sweet pickle relish and milk.
  7. Mix until combined, keeping the filling thick and chunky.
  8. Spoon the filling into the potato skins and place them on a baking sheet.
  9. Bake for another 20 minutes.
  10. Top with cheese, pickles, ketchup, mustard, sour cream or your favorite burger toppings.
